Proofer

Our PROOFER with or without counter-cooling is ideal for stable and uniform proofing processes of premium baked goods. Specifically designed for bakeries, this system allows for optimal proofing of small wheat products, rolls, and bread. We guarantee stable and consistent temperature control, resulting in consistent quality of your baked goods with perfect texture and flavour development.

The successful cooling system for tightly stacked proofing trays. The COOLPROOFER allows fully automated proofing and cooling processes, even with closely stacked plastic trays. Present your customers with consistently long-fermented small wheat pastries with unmatched flavour, lasting crispness, and lively crust. The clever tray conditioning system takes advantage of all the benefits of an automatic dough conditioner and removes excess moisture with the ITRAY dehumidification function. A positive/negative pressure system ensures that the cooling phase, as well as the subsequent conditioning, fermentation and counter-cooling phases, is carried out absolutely uniformly with air gently moving through the side openings of the plastic trays. The result is crispy rolls with flavour, shine, scoring, a short bite, and long-lasting freshness

The secret here is the extended cool fermentation time: The SLOWPROOFER utilizes a gentle slow-fermentation process – without crust formation, without dehydration. The dough pieces are cooled according to their inherent dynamics and develop into extremely stable, high-quality products.

Never has fermentation control been so easy and precise. The FULLPROOFER not only automates the fermentation processes but also optionally integrates fully automated cooling processes. This means that any type of fermentation and moisture control is possible with an ICECOOL cooling concept. With ICS-Touch, the FULLPROOFER can be conveniently operated from a mobile device.

By staggered pre-production, overnight production times can be shifted to daytime, improving workplace quality for employees.

Blast Freezing

IC blast freezers with floor evaporator combine high performance with an uncompromising hygiene concept. Completely made of stainless steel on the inside, high-performance fans separated from the evaporator block can be rotated out of the air chamber with the stainless steel frame for easy cleaning. An integrated water drainage channel in the stainless steel tray bottom directs thaw and cleaning water directly into the floor drain.

The first baking process is interrupted. Afterwards, the products are stored in the FRESHBAKER under defined temperature and climate conditions for several days. Your bread can be freshly baked at any time in a second baking process. Sustainable cooling performance with large-scale evaporator technology and wide fin spacing are the basic equipment of the FRESHBAKER. Gentle cold transport is carried out through the AIRSTREAM air conduction system, which is optimally regulated by the 12″ touchscreen control. An important function is provided by the SOFTSTEAM low-temperature evaporative humidification, as it continuously saturates the surrounding air at a cool room temperature. The BLUEAREA LED light with low energy consumption helps prevent unwanted spore growth.
